SZECHUAN CHICKEN

Make up the chicken coating by beating together 2 egg whites with 2 tablespoons of cornstarch and 1 teaspoon of chilli powder.
Slice up 2 slice chicken breasts and dip each piece into the chicken coating.

Put the chicken in a hot wok with enough peanut oil to virtually deep fry the chicken. Carefully place the chicken into the hot oil and remove once the coating has turned brown. Place the chicken on some kitchen roll or oil drain.

In another hot wok put the following ingredients in and stir together:

1 tablespoons of sesame oil
1 tablespoon of rice wine
1 teaspoon of Worcestershire sauce
2 teaspoons of Tabasco sauce
1 teaspoon of malt vinegar
1 teaspoon of soy sauce
1 tablespoon of brown sugar
1 sliced bird’s eye chilli

Slice up 1 sweet orange pepper and 1 spring onion and add to the sauce. As the sauce begins to simmer add the chicken and stir for another minute then serve immediately.

At first it seems like a lot of ingredients but it’s actually quite simple to make.
